  • Heat over a saucepan on the stove on medium flame.
  • Now, pour the chicken stock and salt.
  • Bring to a boil and add the chicken thighs or breasts, whichever one you are using.
  • Boil all the ingredients for about 15 minutes.

  • Now, add in the coconut milk.

  • Put the raw chicken in a bowl and add some soy sauce to marinade.

  • Chicken thigh or chicken breast
  • Chicken stock 
  • Fish sauce

  • Kabocha squash
  • Thai spices like Thai basil 
  • Red pepper

  • Rinse the Kabocha squash and remove any part of the skin that has blemishes.
  • Now, heat a saucepan on medium flame and pour half of the coconut milk.
  • Bring it to a boil before adding the red curry paste.
  • Stir carefully to mix it properly, breaking any lumps.
  • Continue cooking over medium flame until it is thick, and the oil starts to form.
  • Now, add the chicken thighs and mix with the paste.
  • After this, stir in the remaining coconut milk and chicken broth or stock to give it a nice creamy texture.
  • Add in about 1 tablespoon of the fish sauce and 2 tablespoons of the sugar. 
  • Cook all the ingredients for about 10-15 minutes.
  • Stir in the kabocha squash and simmer for another 5 minutes.
  • Simmer over medium heat until the squash is fully cooked.
  • Stir in Thai spices (Basil and red pepper)

Crab Fried Rice

Let us see how you can prepare Crab Fried Rice:-


  • 3 tablespoons vegetable oil or palm oil
  • 5-6 cloves garlic, finely chopped
  • 2 eggs (whole)
  • 400g cooked rice 
  • 1 Tbsp Thai soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon sugar
  • ¼ teaspoon white pepper
  • 200g crab meat
  • Vegetables of your choice
  • 2 green onions or some cilantro
  • Cucumber slices for serving
  • Lime wedges for serving


To make Crab Fried Rice with authentic Thai spices, follow the steps given in the method below:-

  • In a pan, heat some oil and add finely chopped garlic. 
  • Toss the garlic over medium flame until golden brown.
  • Now, break in the two eggs (whole) and scramble lightly.
  • Turn off the heat when the eggs are halfway cooked.

  • Transfer the eggs to another bowl and return back to the pan.
