- 2 to 3 pounds of boneless chuck roast, about 2 inches thick
- 2 pounds English-cut beef short ribs, take about 3 ribs
- 2 and half teaspoons kosher salt, you can adjust it according to your taste preference
- 8 cups of water
- 1 cup finely chopped onion
- 1/3 cup finely chopped fresh cilantro
- Canola oil or rice-brand oil, for greasing
Steps for Cooking
- Gather all the ingredients on your kitchen slip
- Sprinkle 2 tablespoons of salt on all chuck roast and short ribs. Mix roast chunks, ribs, and adobo sauce in a large bowl. Toss to evenly coat the meat with adobo sauce. Cover and freeze for at least 4 hours or up to 24 hours.
- For cooking, preheat the oven to 300°F.
- Transfer the adobo mixture to a large bowl and add 8 cups of water. Bring to a simmer, uncovered, at medium flame, and stir occasionally.

- Return the broth to the oven, heat over medium and cook, uncovered. Cook until it is reduced to about 8 cups. Ideally, it takes about 15 to 20 minutes for the entire cooking process. Now, Season the broth with salt and pepper to taste.
- Now mix and toss the meat with 1 1/2 cups of the broth.
- Stir together cilantro, onion, and remaining 1/4 teaspoon salt in a bowl and keep it aside.
- For cooking the tortillas, heat a large non-stick electric grill to 400°F. Dip a paper towel in oil canola or rice bran oil and lightly grease the grill.
- Place the stacked tortillas on a grill and load them up with 1/4 cup of prepared meat. Repeat with as many tortillas as can be fit over the grill at a time. Cook until the bottom tortilla is lightly browned and crispy, ideally about 1 to 2 minutes.
